Beef Roll

2 pounds lean ground beef
½ cup chopped onions
2 Tablespoons olive oil or butter
1/8 teaspoon salt
¼ teaspoon black pepper
2 packages (10 ounce) frozen chopped spinach, drained and squeezed dry
 Shredded cheddar cheese (optional)

Preheat oven to 350 degrees.  In a large skillet, sauté the green onions in olive oil or butter until tender.  Stir in spinach, salt and pepper; heat through.  Remove from heat; cool in large bowl.

On a large piece of heavy duty foil, pat the ground beef into a 16” x 10” rectangle.  Spread spinach mixture to within 1” of edges.  Roll up, starting with a short side; seal seams and ends.

Place seam side down in a 9” X 13” x 2” baking dish coated with cooking spray.  Cover and bake for 50 minutes.  Uncover;  sprinkle with shredded cheese if desired and bake 10 minutes longer or until meat thermometer reads 165 degrees.  Let stand for five minutes before cutting.
